The Divine Decadence Chocolate Challenge
The Santa Fe Community College pastry program led by Chef Helen Singleton, Lead Pastry Instructor, Culinary Arts program, took First Place and the People’s Choice Award at the Divine Decadence Chocolate Challenge on Saturday, March 7 at the Drury Plaza Hotel.  The well-attended event was a fundraiser for La Familia Medical Center.
Students Irma Ruiz and Apryl Gonzales assisted Singleton. They are both studying in the Culinary Arts Program, in the School of Trades, Technology, Sustainability and Professional Studies at the Santa Fe Community College.
Singleton calls the award-winning dessert “Arabian Mocha Torte.” She says, “It is a petit entremets, consisting of layers of Milk Chocolate Coffee mousse, White Chocolate Cardamom Cream, Blood Orange Gelee, Flourless Chocolate Cake, and Coffee Orange Crunch. The dessert was served with a Blood Orange Cardamom Sauce, a Chocolate Leaf brushed with Gold powder, and a mini Parisian Macaron.”
The team competed against eight other restaurants. The Second Place award went to Santa Café and Third to La Boca. The entries were judged by Santa Fe Mayor Javier Gonzales, Patty Karlovitz, editor of Local Flavor and Rocky Durham, Santa Fe Culinary Academy. Guests were given a token to vote for their favorite dessert, which determined the People’s Choice Award.
The event raised funds for La Familia Medical Center, which is dedicated to providing excellent, affordable, comprehensive medical and dental health services to everyone in Santa Fe.
